Broccolini with Garlic, Calabrian Chili, and Pine Nuts

Verdant Broccolini is matched with spicy Calabrian chilis and buttery, crunchy pine nuts for a quick side. Steaming the Broccolini and then cooking it uncovered ensures it achieves a perfectly crisp-tender texture. Thinly sliced garlic rounds out the flavor profile of the dish and adds a nice bite. Pair the Broccolini with chicken, steak, and more.
Ingredients
- 3 Tbsp olive oil
- 1/4 pine nuts
- 3 cloves garlic, sliced thinly
- 3 bunches broccolini
- 3 Citarella Calabrian chilis, thinly sliced
- Salt and pepper, to taste
Instructions
- Wash broccolini and trim tough ends. If some stalks are really large, cut in half lengthwise.
- In a large skillet over medium heat, add olive oil and pine nuts. Cook until pine nuts are golden, using a slotted spoon remove to paper towel to drain.
- In same skillet, cook garlic for 2-3 minutes until translucent.
- Add broccolini to pan along with two tablespoons of water and cover pan for 5 minutes. Remove lid and continue cooking another two minutes until broccolini is crisp tender and vibrant green. Season with salt and pepper.
- Turn off heat and mix in pine nuts and Calabrian chilis and enjoy!
