Brûléed French Toast with Berries

To brûlée means to caramelize sugar until it’s crisp and golden brown. Combine that wonderful topping with the soft texture of the French toast and the warm spices in this beautifully inspired dish, and you have a treat that’s sure to make breakfast or brunch the highlight of your day.
Ingredients
- 1 loaf challah or brioche, sliced into thick pieces
- 2 eggs + 2 yolks
- 2 Tbsp sugar
- 2 cups milk
- 1 tsp cinnamon
- 1 tsp cardamom
- ¼ tsp nutmeg
- 1 tsp vanilla extract
- Pinch of salt
- 2 Tbsp butter
- 2 cups fresh berries, halved if large
- ½ cup sugar, for brûlée
- Maple syrup, for serving
Instructions
- In a medium bowl, whisk eggs and yolks with sugar until light and frothy. Add milk, spices, vanilla, and a pinch of salt, mix to combine.
- In a large skillet over medium heat, melt butter. Dip bread into egg custard mixture and cook for 2-3 minutes per side until golden brown; working in batches to not overcrowd the pan.
- Sprinkle tops of French toast with a generous amount of sugar. Using either a blow torch or the broiler of your oven, gently caramelize the sugar until golden brown.
- Serve with berries and maple syrup and enjoy!
