Brussels Sprout Hash with Crispy Pancetta

The richness of deeply flavored, crisp pancetta is the ideal counterpart for tender, earthy Brussels sprouts. The grapes add a touch of sweetness. A uniquely delicious side to complement meat, seafood, and poultry entrées!
Ingredients
- 1 Tbsp olive oil
- ½ cup pancetta, diced
- 1 container shaved Brussels sprouts
- 2 cloves garlic, thinly sliced
- 1 cup red grapes
- Salt and pepper, to taste
Instructions
- In a nonstick skillet over medium heat add olive oil and pancetta, cook until pancetta is crispy, remove and drain on paper towel. Reserving pancetta fat and olive oil in the pan.
- Add garlic to the pan and cook for 1-2 minutes until beginning to soften, then add grapes. Cook for 2-3 minutes until grapes begin to turn golden brown. Remove from pan and set aside.
- Add brussels sprouts and season with salt and pepper. Cook for 3-4 minutes until beginning to turn golden brown. Remove from heat and mix in cooked grapes and pancetta. Season to taste with salt and pepper and serve!
