Brussels Sprout Hash with Crispy Pancetta

SERVES:    4

The richness of deeply flavored, crisp pancetta is the ideal counterpart for tender, earthy Brussels sprouts. The grapes add a touch of sweetness. A uniquely delicious side to complement meat, seafood, and poultry entrées!


  Ingredients

  • 1 Tbsp olive oil
  • ½ cup pancetta, diced
  • 1 container shaved Brussels sprouts
  • 2 cloves garlic, thinly sliced
  • 1 cup red grapes
  • Salt and pepper, to taste

Instructions

  1. In a nonstick skillet over medium heat add olive oil and pancetta, cook until pancetta is crispy, remove and drain on paper towel. Reserving pancetta fat and olive oil in the pan.
  2. Add garlic to the pan and cook for 1-2 minutes until beginning to soften, then add grapes. Cook for 2-3 minutes until grapes begin to turn golden brown. Remove from pan and set aside.
  3. Add brussels sprouts and season with salt and pepper. Cook for 3-4 minutes until beginning to turn golden brown. Remove from heat and mix in cooked grapes and pancetta. Season to taste with salt and pepper and serve!
