Chipotle Cauliflower Tacos with Lime Crema

We love the idea of a vegetarian taco. The nutty flavor of roasted cauliflower is the perfect hero, especially when it’s enhanced with the warm flavors of chili powder, chipotle and cumin.
Ingredients
- 1 lb. cauliflower florets
- 1 red onion, thinly sliced
- 2 Tbsp olive oil
- 2 tsp cumin
- 1 tsp chili powder
- 2 tsp chipotle seasoning
- 2 Tbsp lime juice
- ¼ cup radish, sliced thinly
- 1 jalapeno, sliced thinly
- 1 cup lime crema, for serving
- Tortillas, for serving
- Lime wedges, for serving
- Salt and pepper, to taste
Instructions
- Preheat oven to 450°F. Preheat baking sheet in the oven.
- In a large bowl, toss cauliflower and onions, with olive oil, spices, and salt and pepper. Spread evenly on the preheated baking sheet and roast for 15-20 minutes, stirring halfway through, until golden brown.
- Remove from oven and toss with lime juice.
- Serve with warm tortillas and all the toppings and enjoy!
Lime Crema
Ingredients
- 1 lime
- 1 clove garlic
- 8 oz sour cream
- 2 Tbsp mayonnaise
- ¼ cup fresh cilantro, minced
- Salt and pepper, to taste
Instructions
- Zest and juice lime into a bowl, grate in clove of garlic and season with salt and pepper.
- Add in sour cream, mayo, and cilantro; stir until combined. Check seasoning and adjust if necessary.
- Serve with your favorite tacos or as a dip!
