Chorizo Stuffing with Challah

Tender challah bread meets savory, spicy chorizo in this glorious stuffing, which will make an unforgettable addition to your holiday table. Fresh herbs perfume the dish, and a final garnish of sage drives those flavors home. As it bakes, the top of the stuffing turns crispy and golden brown — you’ll be tempted to dive in with a serving spoon as soon as it’s done.
Ingredients
- 3 Tbsp 4th and Heart Ghee, plus more for baking dish
- 4 links fresh chorizo, removed from casing
- 1/2 cup diced carrot
- 1/2 cup diced onion
- 1/2 cup diced celery
- 3 cloves garlic, minced
- 2 Tbsp fresh rosemary, minced
- 2 Tbsp fresh sage, minced
- 2 Tbsp fresh thyme, minced
- 4 cups cubed Challah bread
- 1 1/4 cup broth
- 1 egg
- Salt and pepper, to taste
- Fresh sage, for garnish
Instructions
- Preheat oven to 375 degrees Fahrenheit. Prepare baking dish by brushing with ghee.
- In a large skillet over medium-high heat, add ghee. Once shimmering add chorizo and cook for 3-4 minutes, breaking up large pieces with the back of a spoon. Add carrots, onion, celery, garlic, and herbs. Cook for 3 minutes, stirring frequently until translucent. Remove from heat and season with salt and pepper.
- Whisk together egg and broth and season with salt and pepper.
- In a large bowl add challah, cooked chorizo, vegetables, and broth mixture. Mix until just combined.
- Place stuffing into prepared baking dish and bake for 30-35 minutes until top is golden brown.
- Remove from oven, garnish with fresh sage, and enjoy!
