Grilled Calamari with Tomatoes

Grilling calamari is one of our favorite ways to prepare it. It really brings out the sweetness of the fish. Here we combine it with a fresh tomato salad featuring grilled lemons, olive oil and fresh herbs for a bright and light way to enjoy a satisfying meal.
Ingredients
- 2 large calamari
- 2 Tbsp olive oil, divided
- 1 lemon, halved
- 2 cups cherry tomatoes, halved
- ¼ cup basil, roughly chopped
- ¼ cup scallions, thinly sliced
- Salt and pepper, to taste
- Citarella sides, for serving
Instructions
- Heat grill or grill pan to medium-high heat.
- Season calamari with salt, pepper, and 1 Tbsp olive oil. Grill for 1 minute per side and remove from heat. Meanwhile, grill lemon until charred.
- Mix halved tomatoes with grilled lemon juice, remaining olive oil, and herbs. Season with salt and pepper, to taste.
- Slice calamari and mix with tomato salad. Enjoy with your favorite Citarella sides!
