Grilled Lamb Loin Chops with Warm Zucchini Salad

Bright Mediterranean ingredients are an ideal pairing for the rich flavor of lamb. Tangy feta, briny olives and fresh mint are perfectly at home in this dish and create a dinner experience that everyone is sure to enjoy. Great for entertaining!
Ingredients
- 4 lamb loin chops
- 4 Tbsp olive oil, divided
- 2 zucchini
- 1 lemon, halved
- ½ cup pitted olives, roughly chopped
- ¼ cup pine nuts, toasted
- ½ cup mint, roughly chopped
- ½ cup parsley, roughly chopped
- Salt and pepper, to taste
Instructions
- Heat grill or grill pan to medium-high heat.
- Season lamb with salt, pepper, and 1 Tbsp olive oil. Cut zucchini in half lengthwise and season with salt, pepper, and 1 Tbsp olive oil. Grill zucchini and halved lemon until charred. Grill lamb for 2-3 minutes per side until desired temperature is reached. Allow lamb to rest for 5-8 minutes.
- Slice zucchini into small pieces and toss in a bowl with juice of grilled lemon, olives, pine nuts, herbs, and remaining olive oil. Season to taste with salt and pepper.
- Serve grilled lamb with warm zucchini salad and enjoy!
