Grilled Pork Chops with Mango Cucumber Salad

Pork loves to pair with fresh fruit. Mangoes bring that sweetness that complements the meat perfectly, and the cucumbers with lime juice add a freshness that makes this dish irresistible.
Ingredients
- 2 bone-in Berkshire pork chops
- 2 Tbsp Citarella Pork Seasoning
- 4 Tbsp olive oil, divided
- 1 1/2 cups mango chunks
- 2 small Persian cucumbers
- 1 lime, juiced
- 2 scallions, thinly sliced
- Salt and pepper, to taste
Instructions
- Preheat grill or grill pan to medium-high heat. Once hot, brush with 1 tablespoon olive oil.
- Brush pork chops with 1 tablespoon olive oil and season with pork seasoning, and salt and pepper to taste.
- Grill pork chops for 3-5 minutes per side until nicely charred and temperature reaches 145 degrees Fahrenheit. Allow to rest for 10 minutes before slicing.
- Dice mango into smaller bite sized pieces and add to medium bowl.
- Using the back of your knife, smash the cucumber then cut into bite sized pieces; add to bowl with mango along with remaining olive oil. Season with lime juice, salt, and pepper. Stir in sliced scallions.
- Slice pork and place on serving platter. Top with mango cucumber salad and enjoy!
