Grilled Portabella Burgers

Portabellas delight with a rich, earthy, meaty flavor that makes them a perfect meatless burger. Top them with bright pesto, earthy sundried tomato and gooey mozzarella and put an Italian spin on your cookout menu.
Ingredients
- 4 Portabella mushrooms, cleaned and stems removed
- 1 Tbsp olive oil
- 4 buns
- ¼ cup Citarella pesto
- 4 slices Citarella fresh mozzarella
- ¼ cup sundried tomatoes
- Radicchio, for serving
- Salt and pepper, to taste
- Citarella sides, for serving
Instructions
- Preheat grill or grill pan to medium-high heat. Coat with olive oil.
- Season portabella mushrooms with salt and pepper. Grill for 3-4 minutes per side. Top with fresh mozzarella and grill an additional 1-2 minutes until just beginning to melt. Rest for 2 minutes before serving.
- Meanwhile, grill buns until just golden.
- Spread pesto on buns and top with radicchio; season with salt and pepper. Place cheesy mushroom patties on top, and top with sundried tomatoes.
- Serve alongside your favorite Citarella sides and enjoy!
