Honey Glazed Rainbow Carrots and Pears

This colorful side dish is equally impressive and simple. All you need to do is cut up the carrots and pears; toss them with honey, olive oil, salt, and pepper; and sprinkle them with fresh thyme. Then, they bake. After 20 minutes, douse the carrots and pears with even more honey so they can achieve a beautiful caramelization during the last few minutes of baking. Finish the dish with more sprigs of fresh thyme for a lovely presentation.
Ingredients
- 2 bunches rainbow carrots
- 2 Bosc pears
- 1/4 cup honey
- 3 tbsp olive oil
- Fresh thyme sprigs, for roasting and garnish
- Salt and pepper, to taste
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Peel carrots and cut in half. Cut pears in half lengthwise and remove core, then slice into eight wedges.
- Toss carrots and pears in olive oil, half the honey, salt, and pepper.
- Place vegetables on parchment lined baking sheet and sprinkle fresh thyme sprigs on top.
- Bake for 20 minutes then drizzle with remaining honey and bake for an additional 5-10 minutes until vegetables are caramelized.
- Place on serving platter and garnish with more fresh thyme.
