Joe’s Blend Bolognese with Black Truffles

This recipe takes Bolognese to the next level with a few key ingredients. First is the star of the show, Joe’s Blend ground beef — a flavorful blend made with teres major, short ribs, sirloin, and brisket created by Citarella owner Joe Gurrera. Then there’s the cherry tomatoes, which burst into the sauce and lend a sweet acidity. And finally, a generous shaving of fresh black truffle adds an earthy, luxe touch. It’s a meal worthy of a special occasion.
Ingredients
- 1 lb. Citarella Rigatoni
- 4 Tbsp olive oil
- 2 cloves garlic, minced
- 1/2 cup finely diced carrots
- 1/2 cup finely diced celery
- 1/2 cup finely diced white onion
- 1 lb. Joe’s Blend ground beef
- 2 fresh bay leaves
- 2 tsp fresh thyme leaves
- 12 oz can of cherry tomatoes
- 1/2 cup red wine
- Salt and pepper, to taste
- Basil, for garnish
- Parmigiano Reggiano, for serving
- Fresh Black Truffle for Shaving on top!
Instructions
- In a sauce pot over medium-high heat add 2 tablespoons of olive oil. Once shimmering add in carrots, celery, white onion, and ground meat. Stir everything and cook for 5 minutes.
- Add in bay leaves, fresh thyme, and can of cherry tomatoes. Using the back of a spoon burst cherry tomatoes and stir everything to combine. Reduce heat to medium-low and cook for 15-20 minutes, stirring frequently.
- Meanwhile bring a large pot of water to boil and season with salt. Cook pasta according to package instructions.
- While pasta is cooking, add red wine to sauce and continue simmering for an additional 10 minutes. Check for seasoning and adjust as necessary.
- Once pasta is done, drain and mix with half of Bolognese and remaining olive oil; check seasoning and adjust as necessary. Place on serving platter and ladle remaining Bolognese on top, garnish with fresh basil and Parmigiano Reggiano cheese.
- Shave a generous amount of black truffle all over the pasta and enjoy!
