Melon Salad with Crispy Prosciutto and Hot Honey

This is a symphony and flavors and textures. The sweetness of cantaloupe engages with the crisp saltiness of the prosciutto and ties the knot with the sweet and spicy honey. This is truly a unique preparation.
Ingredients
- 6 slices prosciutto, thinly sliced
- 1 ripe cantaloupe, diced
- ¼ cup olive oil
- 2 Tbsp lemon juice
- ¼ cup honey
- 2 Tbsp crushed Calabrian chili
- Salt and pepper, to taste
- Fresh basil, for garnish
- Crusty bread, for serving
Instructions
- Preheat oven to 425°F.
- Neatly arrange prosciutto on a parchment lined baking sheet, and bake for 6-8 minutes until crispy. Set aside.
- In a large bowl, toss melon with olive oil, lemon juice, salt and pepper.
- In another small bowl, mix honey with crushed Calabrian chili.
- Place melon on serving platter and garnish with prosciutto chips. Drizzle hot honey over the entire dish and garnish with fresh basil. Serve with crusty bread and enjoy!
