Pear and Fourme d’Ambert Tart

SERVES:    4-6

In this tart, the mild blue cheese is paired with its long-time friend, fresh fruit. There’s nothing quite like this combination, and we love the savory and sweet counterbalance that delights the tongue.


  Ingredients

  • 1 sheet puff pastry, defrosted in fridge for 2 hours
  • 3 bosc pears, sliced thinly
  • ½ cup crumbled Fourme d’Ambert cheese
  • 1 Tbsp olive oil
  • 1 egg
  • Salt and pepper, to taste
  • Fresh minced thyme, for garnish
  • Chopped, candied pecans, for garnish

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Line baking sheet with parchment paper and place puff pastry sheet on top.
  3. Arrange sliced pears on puff pastry sheet leaving a frame around the edges that will become the crust. Scatter cheese on top of pears, drizzle with olive oil, and season with salt and pepper.
  4. Mix the egg with a teaspoon of water and whisk thoroughly. Using a pastry brush, brush the egg wash along the frame you have created.
  5. Bake for 15-20 minutes until pastry is golden brown around the edges.
  6. Remove from oven and sprinkle with fresh thyme. Slice and enjoy!
