Pear and Fourme d’Ambert Tart

In this tart, the mild blue cheese is paired with its long-time friend, fresh fruit. There’s nothing quite like this combination, and we love the savory and sweet counterbalance that delights the tongue.
Ingredients
- 1 sheet puff pastry, defrosted in fridge for 2 hours
- 3 bosc pears, sliced thinly
- ½ cup crumbled Fourme d’Ambert cheese
- 1 Tbsp olive oil
- 1 egg
- Salt and pepper, to taste
- Fresh minced thyme, for garnish
- Chopped, candied pecans, for garnish
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Line baking sheet with parchment paper and place puff pastry sheet on top.
- Arrange sliced pears on puff pastry sheet leaving a frame around the edges that will become the crust. Scatter cheese on top of pears, drizzle with olive oil, and season with salt and pepper.
- Mix the egg with a teaspoon of water and whisk thoroughly. Using a pastry brush, brush the egg wash along the frame you have created.
- Bake for 15-20 minutes until pastry is golden brown around the edges.
- Remove from oven and sprinkle with fresh thyme. Slice and enjoy!
