Roasted Lamb Saddle

The traditional pairing of fragrant rosemary leaves and garlic with tender lamb make this delicious roast a familiar classic. That makes it an excellent choice for entertaining guests as well as special occasion dinners. Everyone will love it!
Ingredients
- 3 lb. lamb saddle
- 6 cloves garlic
- 3 Tbsp fresh rosemary leaves, chopped
- 2 Tbsp fresh thyme leaves, chopped
- ¼ c fresh parsley leaves, chopped
- Juice and zest of 1 lemon
- 4 Tbsp Citarella olive oil
- Salt and pepper, to taste
- Citarella sides, for serving
Instructions
- Preheat the oven to 400°F. In a food processor combine garlic, herbs, lemon juice and zest, and 2 tablespoons of olive oil. Season with salt and pepper, to taste.
- Season the saddle on all sides with the herb puree. Roll and tie the lamb and drizzle remaining olive oil on the exterior and season with more salt and pepper.
- In a large pan over medium-high heat, sear the lamb until golden brown on all sides.
- Place seared lamb into a baking dish and roast for 40-45 minutes until meat reaches 150°F.
- Remove and rest for 10 minutes, at this point the meat should temp 155°F.
- Slice and serve with your favorite Citarella sides.
