Roasted Lamb Saddle

SERVES:    6

The traditional pairing of fragrant rosemary leaves and garlic with tender lamb make this delicious roast a familiar classic. That makes it an excellent choice for entertaining guests as well as special occasion dinners. Everyone will love it!


  Ingredients

  • 3 lb. lamb saddle
  • 6 cloves garlic
  • 3 Tbsp fresh rosemary leaves, chopped
  • 2 Tbsp fresh thyme leaves, chopped
  • ¼ c fresh parsley leaves, chopped
  • Juice and zest of 1 lemon
  • 4 Tbsp Citarella olive oil
  • Salt and pepper, to taste
  • Citarella sides, for serving

Instructions

  1. Preheat the oven to 400°F. In a food processor combine garlic, herbs, lemon juice and zest, and 2 tablespoons of olive oil. Season with salt and pepper, to taste.
  2. Season the saddle on all sides with the herb puree. Roll and tie the lamb and drizzle remaining olive oil on the exterior and season with more salt and pepper.
  3. In a large pan over medium-high heat, sear the lamb until golden brown on all sides.
  4. Place seared lamb into a baking dish and roast for 40-45 minutes until meat reaches 150°F.
  5. Remove and rest for 10 minutes, at this point the meat should temp 155°F.
  6. Slice and serve with your favorite Citarella sides.
