Roasted Rack of Lamb with Mint Vinaigrette

When a rack of lamb is roasted to perfection, there’s nothing quite like it. This preparation replaces the traditional mint jelly with a unique vinaigrette featuring bright, fresh mint as the predominant flavor to complement the richness of the lamb.
Ingredients
- 2 Frenched Racks of Lamb
- 2 Tbsp Dijon mustard
- ¼ cup olive oil
- ½ cup fresh parsley, minced
- 2 Tbsp fresh rosemary, minced
- 2 Tbsp fresh thyme, minced
- 4 cloves garlic, minced
- Salt and pepper, to taste
- Citarella sides, for serving
Mint Vinaigrette
- ½ cup fresh mint, minced
- ½ cup fresh parsley, minced
- 1 clove garlic, grated
- ½ cup olive oil
- 2 ½ Tbsp Red Wine Vinegar
- 1 tsp red pepper flakes
- Salt and pepper, to taste
Instructions
- Preheat oven to 450°F.
- In a small bowl mix together olive oil, parsley, rosemary, thyme, and garlic.
- Season racks of lamb with salt and pepper and rub with Dijon mustard. Place herb oil on racks of lamb, focusing on the tops of the racks.
- Place racks on a parchment lined baking sheet and bake for 20-25 minutes until internal temperature reaches 120°F. Remove from the oven and allow to rest for at least 10 minutes.
- Meanwhile, mix all mint vinaigrette ingredients together, and set aside.
- Slice lamb into chops and serve with mint vinaigrette and your favorite Citarella sides!
