Roasted Vegetable and Goat Cheese Tart

Using smart ingredients like prepared pie crust and our very own roasted root vegetables makes this elegant tart an easy starter or main course. The tangy goat cheese pops against the earthy vegetables, and a drizzle of olive oil finishes everything off. Feel free to make this a freeform tart, or use a tart pan for more uniform results. Garnish with fresh parsley and tuck in.
Ingredients
- 1 uncooked 9-inch pie crust
- 1 egg, beaten
- 3 cups Citarella roasted root vegetables
- 2 Tbsp olive oil
- 1 small log goat cheese
- Salt and pepper, to taste
- Fresh minced parsley, for garnish
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Place pie crust in between two sheets of parchment paper and roll to 1/4 inch thickness.
- Put root vegetables in center of crust leaving a 1-inch boarder. Crumble goat cheese on top and drizzle with olive oil.
- Using your hands carefully fold edges of crust up towards filling and pleat to create a free form tart. Alternatively, you can use a tart pan, pressing dough into pan and following same steps.
- Whisk egg with 1 teaspoon of water. Brush egg wash on edges of crust.
- Bake for 20-25 minutes rotating halfway through until crust is golden brown and cooked through.
- Rest for 5 minutes, then top with fresh parsley. Cut and enjoy!
