Thanksgiving Leftovers Shepherd's Pie

While Shepherd’s Pie is typically made with lamb or beef, here, the star is roasted turkey. The diced meat is mixed with roasted root vegetables, roasted green beans, fresh herbs, and gravy to make a hearty filling. Then, mashed potatoes are piped on top of that filling to create a fluffy final layer that will turn golden brown in the oven. It’s a fantastic (and mouthwatering) way to transform your holiday leftovers.
Ingredients
- 1 cup roasted green beans, roughly chopped
- 1 1/2 cup roasted root veggies
- 2 cups roasted turkey, diced
- 1/2 cup gravy
- 1 Tbsp fresh sage, minced
- 1 Tbsp fresh rosemary, minced
- 1 Tbsp fresh thyme, minced
- 2 1/2 cups mashed potatoes
- Fresh minced thyme, for garnish
- Salt and pepper, to taste
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- In a large bowl mix together green beans, roasted root vegetables, turkey, herbs, and gravy. Taste and season with salt and pepper as needed. Pour into baking dish.
- Place mashed potatoes into a Ziplock bag and cut the corner so that you can pipe the potatoes on top of the Turkey and vegetable mixture. You can also dollop with a spoon if you prefer.
- Place in oven and bake for 20-25 minutes until golden brown and bubbling.
- Remove from oven and garnish with fresh herbs.
