Joe’s fresh-from-the-water seafood arrives at the Fulton Fish Market whole, where his experienced fishmongers handle it with extreme care. They skillfully cut tuna and organic salmon into steaks and fillets (packing each one on fresh ice) and they gently transport live lobsters and local oysters to each of Citarella’s seven locations in a fleet of refrigerated trucks.
