Watermelon and Feta Skewers

This classic combination of sweet, juicy watermelon with tangy, pleasantly salty feta cheese makes a beautiful presentation. The richness of the balsamic and herbaceous flavor of the mint pull it all together deliciously.
Ingredients
- 1 baby watermelon
- 1/2 lb. feta
- 1/2 cup fresh mint leaves
- 1/4 cup balsamic drizzle
- Salt and pepper, to taste

Instructions
- Cut off the top and bottom of watermelon so it’s able to stand tall on your cutting board on the cut surface. Using a sharp knife carefully remove the rind from the watermelon in a downward motion following the curve of the fruit.
- Cut both watermelon and feta into bite-sized cubes. Thread watermelon and feta onto skewers, alternating fruit and cheese however you choose.
- Roll mint leaves and thinly julienne to create ribbons.
- Place skewers on serving platter and season with salt and pepper. Drizzle with balsamic glaze and top with julienned mint.
