It should be said that some epicureans of note have the opinion that hake is the Atlantic’s finer take on cod. With wide, slightly sweet, firm white flakes, this wild caught fish does well baked, broiled, or bolstering bubbly soups and stews. Skin is removed from the hake fillets.
