At Citarella gourmet market, we serve a city that moves fast. So, when time is of the essence, we always consider the sand dab—a small, flat fish from the flounder family. Locally sourced from the waters off Long Island. Its delicate, flaky white flesh sautés up beautifully in a flash. (Just a New York minute (or two) per slender side). Throw a few capers and some chopped parsley at the pan, enjoy, and get back to work (or play).
We fry Sand Dab fillets with butter or olive oil until golden and crispy, careful not to overcook.
Portion Size
Each Wild Sand Dab fillet is approximately 3-4 ounces. We recommend 6-8 ounces raw weight per person when serving fish fillets and steaks. The size of this order is 2 lbs (approx. 3-4 ounces per fillet), which serves 1 person.
