Freshly sourced from trusted purveyors in Idaho, where cast iron often meets open flame, and where high altitude and hard winters result in a surprisingly delicate, almost creamy cold-water fish. Fusing together the flavors of salmon and trout, this farm-raised variety has a mild flavor and velvety texture. Traditionally, fresh trout makes for a fantastic smoked fish. Rainbow trout's coral-hued flesh is beautiful paired in an herb salad with bright citrus, sharp onion, and rich avocado.
Our whole Rainbow Trout is approximately 1 pound each. We recommend 1 lb. of raw fish per person when serving whole fish. The size of this order is 2 fish (approx. 1 lb per fish), which serves approx. 2 people.
