Sweet, tender and sourced from the pristine waters of New Zealand, cockles are sweet with an intense briny flavor. They’re housed in eye catching green striated shells. They are the smallest of hardshell clams—about the size of a quarter—so factor that into easy seafood recipes, like a classic spaghetti vongole with Citarella artisanal pasta from Italy... so order extra of these petite clams.
Sauté for 6 to 8 minutes with garlic, parsley, olive oil and white wine; then layer over pasta with a dash of red pepper for a kick of spice. Make sure to cook these wild New Zealand Cockles until the shells open!
Portion Size
When cooking New Zealand Cockles we recommend 6 pieces for an appetizer or 12 pieces as a main course when serving cooked clams. The size of this order is 3 lbs (approx. 24 cockles per lb), which serves 6-12 people.
