A long-time favorite of sushi counter connoisseurs, uni (or, fresh sea urchin roe) is unlike anything else you’ll find in the ocean. Removed from its spiny shells, this soft, golden delicacy is seasonally sourced from America’s Pacific coast (the finest uni often comes from the waters off Santa Barbara, California). Larger than their East Coast counterparts, our West Coast uni is rich and creamy, buttery and swirling with subtle sea flavors. It’s a taste that-once acquired-becomes so alluring, it takes on nearly aphrodisiacal qualities. This prized uni should be enjoyed raw or in cold preparations. This is a special order item.
