Caprese Chicken Pizza with Pesto and Roasted Tomatoes

When you start with our delicious Rotisserie Chicken, things can only get better. This pizza with the beautifully classic combo of pesto, tomatoes and mozzarella comes together easily and will taste like a pizzaiolo from Italy prepared it just for you!
Ingredients
- 1 ½ cups Citarella rotisserie chicken, shredded
- 1 ball Citarella pizza dough
- ½ cup Citarella pesto
- ½ cup shredded mozzarella
- ½ cup cherry tomatoes, halved
- ½ lb fresh mozzarella, torn into small pieces
- ½ cup fresh basil leaves, torn
- Salt and pepper to taste
- Red pepper flakes and olive oil, for garnish
Instructions
- Preheat oven with pizza stone to 450°F. Allow dough to come to room temperature.
- Stretch your pizza dough to a large round, making sure not to tear. Spread pesto on dough, leaving some space for your crust. Top with shredded mozzarella, tomatoes, shredded chicken, and fresh mozzarella; season with salt and pepper.
- Bake pizza for 8-12 minutes, rotating halfway through, until golden-brown and bubbly.
- Rest for 2-3 minutes before cutting, then top with chili flakes and fresh basil. Finish with a drizzle of olive oil and enjoy!
