Chef Carolina’s Apple Cobbler with Berry Crumble

Our Executive Chef Carolina is an award-winning pastry master. Here she enhances a classic apple cobbler with a crumble featuring sweet blueberries and raspberries. This one is begging for a scoop of vanilla ice cream!
Ingredients
- 6 lb. mixed apples
- 3 tsp apple pectin
- 1.5 tsp ground cinnamon
- 3 stick butter, cubed and divided
- 4 cups granulated sugar, divided
- 4 cups flour
- ½ cup blueberries
- ½ cup raspberries
- Powdered sugar, to garnish
- Vanilla ice cream, for serving
Instructions
- Preheat oven to 360 degrees Fahrenheit.
- Wash and peel apples then slice thinly. Toss in a bowl with apple pectin, cinnamon, one stick of the cubed butter, and 2 cups granulated sugar.
- In a medium bowl, add remaining butter, sugar, and flour. Using your hands or pastry blender mix the butter into the dry ingredients, leaving nice clumps of butter; this will be your crumb topping.
- Pile apple filling into a baking dish, top with berries, then finish with crumble. Bake for 30-35 minutes until filling is bubbling and crumble is golden brown.
- Allow to cool for at least 20 minutes before serving. Garnish with powdered sugar and serve with vanilla ice cream.
