Cocktail Potatoes with Soft Scramble and Caviar

Everything’s better with caviar! These luxurious hors d’oeuvres are no exception. Their creamy, rich flavor and texture is accentuated by the briny pop of caviar pearls. That’s a sophisticated starter or main event at your next cocktail party. Enjoy!
Ingredients
- 1 lb. small potatoes
- 1 Tbsp olive oil
- 4 large eggs
- 2 Tbsp milk
- 1 Tbsp butter
- 1 oz Citarella Caviar
- 2 tsp minced chives, for garnish
- Salt and pepper, to taste
Instructions
- Place potatoes in a pot of water and bring to a boil. Cook for 8-10 minutes until fork tender. Drain and allow to dry for 1-2 minutes.
- Cut off the tops of the potatoes and scoop out about a teaspoon of potato and discard. This is so you have a place for the eggs to sit.
- Heat olive oil in a nonstick skillet over medium-high heat. Sear cut side of potato for 1-2 minutes until golden brown, then set aside.
- Meanwhile, in a small bowl, beat eggs with milk, salt and pepper.
- In a small nonstick skillet, combine beaten eggs with butter and bring up to medium heat. Using a rubber spatula, stir-push eggs around the pan until they’re just begging to set.
- Remove from heat and stir in chives. Spoon eggs onto scooped out potatoes and garnish with Citarella caviar and fresh chives.
