Grilled Peaches & Lemon Tea Cake

Grilling peaches intensifies their sweetness, bringing out notes of caramel. Toasting our Lemon Tea Cake on the grill also adds another flavor dimension to an already delicious treat. When you combine them, you have a sophisticated dessert course that’s just as sophisticated at the dining table as it is in the backyard.
Ingredients
- 1 Citarella Lemon Tea Cake
- 2 ounces of olive oil
- 1 fresh peach cut in 6 slices
- 1 tbsp of raw sugar
- 4 oz plus 1 tbsp of freshly squeezed lemon juice, separated
- 1 tbsp. of freshly ground ginger
- 1 lemon zested
- 2 tbsp powdered sugar
- 1 sprig of fresh mint
Instructions
- Begin by combining the peaches, sugar, tablespoon of lemon juice, ginger and zest. Allow to marinate for about 1 minute.
- On a pre-heated grill, cook peaches for 2 minutes per side. Flambe’ with 4 oz of fresh lemon juice before removing from grill.
- Slice lemon tea cake into 6 slices and brush with olive oil. Grill for 2 minutes per side. Top with the grilled peaches and finish with a touch of powdered sugar and garnish with fresh mint.
