Grilled Zucchini Planks with Herby Yogurt and Feta

-SERVES:    4-6

PREP TIME:   5 minutes

TOTAL TIME:   10 minutes

COURSE:  Starter

Our farm fresh zucchini planks are ready to grill. Serve them with a tangy, herbaceous yogurt sauce and a crumbling of feta cheese for a decidedly Greek flair to this delicious starter or side.


  Ingredients

  • 3 packs Citarella zucchini planks
  • 1/4 cup olive oil
  • 1 cup Greek yogurt
  • 1 Tbsp minced parsley
  • 1 Tbsp minced dill
  • 1 tsp lemon zest
  • 1 Tbsp lemon juice
  • 1/4 crumbled feta
  • 1/4 toasted pine nuts
  • Fresh dill, for garnish
  • Salt and pepper, to taste

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Season zucchini on both sides with olive oil, salt, and pepper. Grill zucchini for 3-4 minutes per side until golden and nicely charred.
  3. Meanwhile, mix together yogurt, herbs, lemon juice, and zest. Season with salt and pepper to taste. If you’d prefer a looser sauce, you can thin with a splash of water.
  4. Spread yogurt sauce on the bottom of your serving platter and place grilled zucchini on top. Top with crumbled feta, toasted pine nuts and fresh dill.
