Grilled Zucchini Planks with Herby Yogurt and Feta

Our farm fresh zucchini planks are ready to grill. Serve them with a tangy, herbaceous yogurt sauce and a crumbling of feta cheese for a decidedly Greek flair to this delicious starter or side.
Ingredients
- 3 packs Citarella zucchini planks
- 1/4 cup olive oil
- 1 cup Greek yogurt
- 1 Tbsp minced parsley
- 1 Tbsp minced dill
- 1 tsp lemon zest
- 1 Tbsp lemon juice
- 1/4 crumbled feta
- 1/4 toasted pine nuts
- Fresh dill, for garnish
- Salt and pepper, to taste
Instructions
- Preheat grill or grill pan to medium-high heat.
- Season zucchini on both sides with olive oil, salt, and pepper. Grill zucchini for 3-4 minutes per side until golden and nicely charred.
- Meanwhile, mix together yogurt, herbs, lemon juice, and zest. Season with salt and pepper to taste. If you’d prefer a looser sauce, you can thin with a splash of water.
- Spread yogurt sauce on the bottom of your serving platter and place grilled zucchini on top. Top with crumbled feta, toasted pine nuts and fresh dill.
