Herb Roasted Bone-In Turkey Breast

Who says turkey is only for Thanksgiving? We love it all year round, and this roast is extra special because it’s perfumed with fresh herbs and lemon zest, with a good hit of garlic to make it out of the ordinary. We recommend checking out our sides to complete this scrumptious meal, which is perfect for Sunday dinner and for entertaining.
Ingredients
- 2 Tbsps olive oil
- 1 Tbsp fresh thyme, minced
- 1 Tbsp fresh rosemary, minced
- 2 tsp salt
- 2 tsp black pepper
- 3 cloves garlic, minced
- 1 Tbsp lemon zest, from one lemon
- 3 lb bone-in turkey breast
- Citarella Sides for serving
Instructions
- Preheat oven to 375°F. Place turkey breast skin side up on the rack of a roasting pan, or in a lightly oiled baking dish.
- In a small bowl mix together herbs, garlic, lemon zest, olive oil, salt, and pepper.
- Rub herb mixture all over the turkey. Roast turkey for about 20 minutes per pound until the turkey reaches an internal temperature of 160°F. Make sure you are checking the temperature in the thickest part of the breast.
- Remove from the oven and tent with foil to rest for 15 minutes. The resting period allows for the turkey to continue cooking slightly and stay juicy.
- Slice and serve with pan drippings and your favorite Citarella Sides.
