Joe’s Scallop Crudo

Joe’s recipe is brightened with fresh clementine juice for a tartness that complements the sweetness of the fish. He adds crunchy radishes for texture and a drizzle of extra virgin olive oil for richness.


  Ingredients

  • 3 raw sea scallops, chilled
  • 1 red radish, cut into thin matchsticks
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed clementine juice
  • Black Hawaiian sea salt to taste

Instructions

  1. Using a very sharp knife, slice the scallops crosswise against the grain into 1/4-inch-thick slices. Arrange them on a chilled platter.
  2. Garnish with the radish matchsticks and drizzle with the olive oil and clementine juice. Sprinkle with salt and serve immediately. Enjoy!
