Marinated Mahon Cheese

Mahon cheese is buttery and tangy with a pleasant saltiness. Its flavor profile is enhanced with an herby marinade and bright lemon zest in this delectable appetizer.
Ingredients
1 lb. Mahon cheese
1 cup Citarella Olive oil
2 Tbsp fresh thyme, minced
2 Tbsp fresh tarragon leaves
1 Tbsp lemon zest
Salt and pepper, to taste
Citarella rustic baguette, for serving
Instructions
Remove rind from cheese and cut into small cubes.
In a large bowl, add olive oil, herbs, and lemon zest. Stir together and season with salt and a lot of black pepper. Add cheese and stir to combine.
Marinate cheese for at least 15 minutes but preferably an hour.
