Melon Salad with Crispy Prosciutto and Hot Honey

SERVES:    4

TOTAL TIME:   15 minutes

COURSE:  Starter

This is a symphony and flavors and textures. The sweetness of cantaloupe engages with the crisp saltiness of the prosciutto and ties the knot with the sweet and spicy honey. This is truly a unique preparation.


  Ingredients

  • 6 slices prosciutto, thinly sliced
  • 1 ripe cantaloupe, diced
  • ¼ cup olive oil
  • 2 Tbsp lemon juice
  • ¼ cup honey
  • 2 Tbsp crushed Calabrian chili
  • Salt and pepper, to taste
  • Fresh basil, for garnish
  • Crusty bread, for serving

Instructions

  1. Preheat oven to 425°F.
  2. Neatly arrange prosciutto on a parchment lined baking sheet, and bake for 6-8 minutes until crispy. Set aside.
  3. In a large bowl, toss melon with olive oil, lemon juice, salt and pepper.
  4. In another small bowl, mix honey with crushed Calabrian chili.
  5. Place melon on serving platter and garnish with prosciutto chips. Drizzle hot honey over the entire dish and garnish with fresh basil. Serve with crusty bread and enjoy!
