Mussels
with Guanciale & White Wine

The pleasant saltiness of guanciale, an Italian bacon, and the sweetness of mussels complement each other perfectly in this dish. The white wine and aromatics really bring it all together in an entrée that’s begging for a crusty bread for dipping!
In a large skillet over medium heat add olive oil and guanciale. Cook for 3-4 minutes, until guanciale begins to render and caramelize. Add garlic and shallot and cook an additional 1-2 minutes.
Add the white wine, bring to a simmer and add the mussels. Cover the pan and cook for 3-5 minutes until all mussels open. Any unopen mussels should be discarded.
Season with salt and pepper and garnish with fresh chives. Serve with crusty bread and your favorite Citarella sides.
