Broiled Red Snapper

Ingredients

  • 1/4 cup extra-virgin olive oil, plus more for greasing the pan
  • 4 (6- to 8-ounce) skin-on Florida red snapper fillets
  • 2 teaspoons smoked paprika
  • Sea salt and freshly ground pepper to taste

Instructions

  1. Preheat the broiler on high and place a rack 5 to 6 inches from the flame.
  2. Lightly coat a rimmed baking sheet with olive oil.
  3. Rinse the fish and pat it dry with paper towel.
  4. Put the fillets in a large bowl and drizzle with the olive oil.
  5. Using your hands, gently rub the oil over the fillets until fully coated.
  6. Sprinkle with the paprika and season with salt and pepper.
  7. Place the snapper skin-side up on the prepared baking sheet and broil for 6 minutes without flipping.
  8. Transfer the fish to warm plates and serve.
