Steamed Flounder

SERVES:    2

Ingredients

  • 2 (6- to 8-ounce) Skinless flounder fillets
  • 1 teaspoon Italian seasoning
  • Sea salt and freshly ground pepper to taste
  • 1 teaspoon extra- virgin olive oil

Instructions

  1. Rinse the flounder and pat it dry with paper towel.
  2. Season the fillets with the Italian seasoning and salt and pepper.
  3. Coat the bottom of a large sauté pan with the olive oil.
  4. Add 1/4 inch of water to the pan and bring to a simmer over medium-high heat.
  5. Gently slide the flounder into the pan, keeping some space between the two fillets.
  6. Cover the pan and lower the heat so the water continues to simmer.
  7. Cook the fillets for 3 minutes.
  8. Using a fish spatula, remove the fillets from the pan and serve immediately.
