Roasted Plums & Nectarines with Vanilla Scented Yogurt

Just the sound of roasted plums and nectarines sounds delicious, and they are. We pair them with creamy yogurt, crunchy granola and the warm flavors of cinnamon and vanilla bean for an absolutely perfect way to start your day. A delicious dessert, too!


  Ingredients

  • 3 ripe plums
  • 4 ripe nectarines
  • 2 Tbsp butter, diced
  • ½ tsp cinnamon
  • 2 Tbsp honey
  • 2 cups vanilla yogurt
  • 1 vanilla bean
  • 1 cup granola

Instructions

  1. Preheat oven to 400°F.
  2. Split plums and nectarines in half and remove pits. Place into a baking dish and sprinkle with cinnamon. Place a small piece of butter in center, then drizzle with honey. Bake for 10-12 minutes until fruit has softened and begins to turn golden.
  3. Meanwhile mix yogurt with vanilla bean.
  4. Serve warm roasted fruit with vanilla bean yogurt and granola. Enjoy for breakfast or dessert!
