Tagliatelle with Urbani Truffles

The simplicity of this Piemontese classic allows for the intoxicating aroma of the truffles to shine. The richness of the butter completes the masterpiece!
Ingredients
- 8.8 oz. Citarella Tagliatelle pasta
- 3 oz. unsalted butter, cubed
- 3 oz. freshly grated Parmigiano Reggiano
- 3 oz. white or black truffles, freshly sliced
- Milk to taste
- Salt to taste
Instructions
- Boil the Tagliatelle in plenty of salted water. Place the butter, some milk, ¾ of the Parmigiano Reggiano and ½ of the truffle slices in a serving dish of your choosing, then set it on top of the boiling pot so that the steam will warm it.
- When the Tagliatelle are ready, drain and pour them into the dish with the condiment you prepared beforehand. Stir well, sprinkle with the remaining Parmigiano and freshly shaved, white or black truffle slices. Serve hot and enjoy!
