Turkey Lettuce Cups

This Asian inspired dish offers a variety of textures and a depth of flavor, yet is surprisingly light. We love it because it’s simple to create and full of fresh ingredients. That makes it a welcome game changer to weeknight meals. It also makes a great appetizer for entertaining. Dipping it in sriracha brings it over the top!
Ingredients
- 3 tsp olive oil, divided
- 1 lb Citarella ground turkey
- 4 Tbsp Hoisin sauce
- 1 Tbsp soy sauce
- 2 tsp sriracha, optional
- 1 tsp rice vinegar
- 1 1/2 tsp sesame oil
- 3 cloves garlic, minced
- 1 Tbsp fresh ginger, minced
- 1 bunch scallions, minced
- 2 cups coleslaw mix (shredded carrots and cabbage)
- 1 (8 oz) can water chestnuts, drained and chopped
- 1 large head Bibb lettuce or iceberg lettuce
- ¼ cup fresh cilantro, roughly chopped for garnish
- 1 lime, cut into wedges for garnish
- Sesame seeds, for garnish
- Salt and pepper, to taste
Instructions
- Heat half the oil in a large non-stick skillet over medium-high heat.
- Add ground turkey and cook until slightly browned and cooked through.
- While turkey is cooking, mix hoisin, soy sauce, sriracha, rice vinegar, sesame oil, and season with salt and pepper.
- Drain any excess liquid from turkey and push turkey to one side of the skillet. Add the remaining oil to the empty side of the skillet and sauté green onions, coleslaw mix, garlic, and ginger for about 2 minutes until wilted and aromatic.
- Pour in sauce and mix everything together until combined./span>
- Serve warm inside lettuce cups topped with sesame seeds, fresh cilantro, and additional hoisin and sriracha for dipping.
