The sweet and flaky porgy is among the finest tasting fish in the Atlantic Ocean. Sure, they have some bones to work around. But as is the case at sea—and in life—those willing to put in the work will be handsomely rewarded. Brush each lean, meaty porgy with olive oil and toss it on the grill. Sprinkle with salt. Then, get busy.
Coat in fresh cornmeal and pan fry wild, whole porgies in olive oil, salt, lemon and a pat of butter.
Portion Size
Our whole Wild Porgies are approximately 1-2 pounds each. We recommend 1 lb. of raw fish per person when serving whole fish. The size of this order is 2 fish (approx. 1-2 lbs per fish), which serves 2-4 people.
