Green Curry Mussels

The flavors and aromas of green curry, ginger and coconut milk will transport you to a beautiful setting in Thailand. Enjoy the taste experience with our sweet, plump mussels and we promise, you’ll make this one often!
Ingredients
- 1 bag mussels
- 2 Tbsp olive oil
- 2 Tbsp ginger, minced
- 3 cloves garlic, minced
- 2 Tbsp scallions, thinly sliced
- 1 shallot, thinly sliced
- 2 Tbsp green curry paste
- 1 can coconut milk
- Lime, for serving
- Scallions, for garnish
- Salt and pepper, to taste
Instructions
- Rinse mussels under cold water to clean.
- In a large skillet over medium heat, add olive oil. Once shimmering add ginger, garlic, scallions, and shallot; cook for 2-3 minutes until translucent and fragrant.
- Add green curry paste and cook for 1-2 minutes, then add coconut milk. Bring to a simmer then add in mussels. Cover skillet and cook for 6-8 minutes until mussels have opened. Any mussels that don’t open should be discarded.
- Place mussels on your serving platter, then pour green curry sauce on top. Garnish with fresh scallions and serve with lime. Enjoy with your favorite Citarella sides!
