Ora King Salmon with White Wine Mustard Sauce

Our buttery Ora King Salmon has an exquisite flavor that needs little embellishment. This simple but divine mustard wine sauce has just enough acidity and zest to complement the fish perfectly.
Ingredients
- 1.5 lbs. Ora King Salmon filet, pin bones removed
- 2 Tbsp olive oil
- 2 Tbsp butter
- 1/4 cup grainy mustard
- 1/4 cup white wine
- 2 Tbsp lemon juice
- Salt and pepper, to taste
- Parsley, to garnish
Instructions
- Clean salmon and remove skin if desired. Cut into 4 even pieces and season with salt and pepper.
- In a large, non-stick skillet over medium-high heat add olive oil. Sear salmon skin side down for 2-3 minutes until golden brown, using a spatula to gently press fish down to keep flush with the pan. Flip and cook an additional 2-3 minutes until desired doneness. Remove salmon and place on serving platter tented with foil.
- In same pan over medium-high heat, melt butter, then add wine and mustard. Cook for 1-2 minutes until incorporated. Season with salt and pepper to taste, and finish with lemon juice.
- Pour sauce over salmon and garnish with fresh parsley. Serve alongside your favorite Citarella sides and enjoy!
