Prosciutto Wrapped Lobster Bites

Our incomparably sweet lobster meets the perfect counterfoil in savory, pleasantly salty prosciutto. These both crisp and juicy bites will have everyone wanting more. Maybe you should double the recipe!
Ingredients
- 2 live lobsters
- 12 slices of prosciutto
- 2 Tbsp olive oil
- Salt and pepper, to taste
- Fresh dill, for garnish
- Endive, for garnish
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Break down lobsters, removing the meat from claws and tails. Cut tail meat into even pieces.
- Wrap each piece of lobster meat in prosciutto, making sure to keep some of the beautiful red flesh exposed.
- Brush with olive oil and season with salt and pepper. Bake for 6-8 minutes until lobster meat is bright red and prosciutto is golden.
- Lay endive leaves on your serving platter, and place lobster bites on top. Garnish with fresh dill and enjoy!
