Vietnamese Inspired Chicken Salad with Peanut Dressing

It all starts with our perfectly seasoned Rotisserie Chicken. Then we enhance it with an explosion of flavors reminiscent of your favorite Vietnamese dishes. This is a must try for anyone who likes spicy, sweet, herbal, earthy and fresh all at the same time!
Ingredients
- 2 cups Citarella rotisserie chicken, shredded
- 1 English cucumber
- 1 cup shredded carrots
- 1 cup shredded cabbage
- 1 box mixed greens
- ¼ cup fresh mint leaves, roughly chopped
- ¼ cup thinly sliced scallion
- ¼ cup fresh basil, roughly chopped
- ¼ fresh cilantro, roughly chopped
- ¼ cup peanut butter
- 1 lime, juiced
- 2 tsp honey or maple syrup
- 1 Tbsp rice wine vinegar
- 1 Tbsp sesame oil
- 2 tsp sriracha
- ½ cup roasted peanuts, roughly chopped
- Salt and pepper, to taste
- Peanuts and fresh herbs, for garnish
Instructions
- Using a vegetable peeler, peel cucumber into long thin ribbons. Place in a bowl with mixed greens, carrots, cabbage, and herbs. Cover with a damp towel and keep in refrigerator.
- Mix peanut butter, lime juice, honey, vinegar, sesame oil, and sriracha together. Add warm water 1 tsp at a time until you reach your desired dressing consistency. Season with salt and pepper.
- Add chicken and chopped peanuts to mixed greens and top with dressing and toss to coat. Garnish with more peanuts and fresh herbs and enjoy!
