Warm Thai Style Grass Fed Beef and Mushroom Salad

The bold flavor of grass fed ground beef and earthy goodness of oyster mushrooms stand up beautifully to the delectable explosion of tastes in the Thai-inspired sauce.
Ingredients
- 1 lb. Grass Fed Ground Beef
- 2 cups oyster mushrooms, pulled into smaller pieces
- 2 tbsp olive oil
- 1 Serrano chili, sliced thinly
- 1/4 cup rice vinegar
- 1 tbsp honey
- 1 tbsp soy sauce
- 2 tsp sriracha
- 1 tbsp sesame oil
- 2 tbsp lime juice
- 1 tbsp sesame seeds
- 1/3 cup fresh mint leaves
- 1/3 cup fresh Thai basil leaves (regular works too!)
- 1/3 cup thinly sliced scallions
- Salt and pepper, to taste
Instructions
- Preheat 2 large skillets over medium-high heat. Once hot add 1 tablespoon oil to each pan.
- Place mushrooms in one pan and beef in another. Cook for 3-5 minutes until golden brown and fully cooked. Stirring too much will release a lot of liquid and prevent browning.
- Meanwhile, mix rice vinegar, honey, soy sauce, sriracha, sesame oil, and Serrano chili together.
- Mix beef and mushrooms together and pour dressing on top. Mix and taste for seasoning, adjust as needed. Add lime juice, sesame seeds, and herbs and mix to combine.
- Serve as is or with white rice and enjoy!
