Watermelon Salad with Feta and Tomato

SERVES:    4-6

This recipe illustrates how the most perfect fruits and vegetables in season need little to make them shine. Just the brightness of fresh mint and red wine vinegar with the tanginess of feta set off the sweetness of watermelon and tomatoes brilliantly.


  Ingredients

  • 1 baby melon, halved
  • 1 pint cherry tomatoes, halved
  • ½ cup fresh mint, roughly chopped
  • ¼ cup olive oil
  • 2 Tbsp red wine vinegar
  • ½ cup feta, cut into cubes
  • Salt and pepper, to taste
  • Fresh mint, to garnish

Instructions

  1. Using a melon baller or a tablespoon, scoop out melon into bite-sized pieces. Save melon rind to use as your serving vessel.
  2. In a large bowl toss melon with tomatoes, mint, olive oil, vinegar, salt, and pepper. Check for seasoning and adjust as necessary.
  3. Place salad back into scooped melon rinds and top with feta and more mint. Enjoy!
