Roasted Rack of Lamb with Mint Vinaigrette

When a rack of lamb is roasted to perfection, there’s nothing quite like it. This preparation replaces the traditional mint jelly with a unique vinaigrette featuring bright, fresh mint as the predominant flavor to complement the richness of the lamb.


  Ingredients

  • 2 Frenched Racks of Lamb
  • 2 Tbsp Dijon mustard
  • ¼ cup olive oil
  • ½ cup fresh parsley, minced
  • 2 Tbsp fresh rosemary, minced
  • 2 Tbsp fresh thyme, minced
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • Citarella sides, for serving

 Mint Vinaigrette

  • ½ cup fresh mint, minced
  • ½ cup fresh parsley, minced
  • 1 clove garlic, grated
  • ½ cup olive oil
  • 2 ½ Tbsp Red Wine Vinegar
  • 1 tsp red pepper flakes
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 450°F.
  2. In a small bowl mix together olive oil, parsley, rosemary, thyme, and garlic.
  3. Season racks of lamb with salt and pepper and rub with Dijon mustard. Place herb oil on racks of lamb, focusing on the tops of the racks.
  4. Place racks on a parchment lined baking sheet and bake for 20-25 minutes until internal temperature reaches 120°F. Remove from the oven and allow to rest for at least 10 minutes.
  5. Meanwhile, mix all mint vinaigrette ingredients together, and set aside.
  6. Slice lamb into chops and serve with mint vinaigrette and your favorite Citarella sides!
