Roasted Salmon with Harissa and Tomatoes

The buttery, rich flavor of the salmon and the North African punch of the spicy Harissa offer an experience of delicious contrast to your tastebuds. Add the fresh sweetness of cherry tomatoes and you have a quick and easy meal solutions that offers an explosion of flavors.


  Ingredients

  • 1 1/2 pounds whole salmon fillet
  • 2 pints cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 Tbsp harissa paste
  • 3 Tbsp olive oil
  • ¼ cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Citarella sides, to serve

Instructions

  1. Preheat oven to 425°F.
  2. Mix cherry tomatoes, with garlic, olive, salt and pepper in a small bowl.
  3. Season salmon with salt, pepper, and harissa paste on all sides.
  4. Place salmon in a baking dish and pour seasoned tomatoes around.
  5. Bake salmon for 8-12 minutes depending on your desired doneness.
  6. Serve roasted salmon with your favorite Citarella sides.
