Salmon Kabobs with Tropical Tequila Sauce

We’re always looking for delicious ways to grill seafood. Build salmon kabobs with fresh mango, bell pepper and red onion, then add a tropical twist with a Terrapin Ridge Farms sauce for a unique grilling taste sensation!
Ingredients
- 1.5 lb. Salmon, skin removed and cubed
- 3 Tbsp olive oil
- 2 cups mango, cubed
- 1 red bell pepper, large dice
- 2 small red onions, quartered
- ½ cup cilantro, roughly chopped
- 2 limes, halved for serving
- 1 bottle Terrapin Ridge Farms Tropical Tequila Sauce
- Salt and pepper, to taste
- Citarella sides, for serving
Instructions
- Heat grill or grill pan to medium-high heat.
- Season salmon and vegetables with salt, pepper, and olive oil.
- Build your skewers alternating salmon, mango, peppers, and onion. Grill for 2 minutes per side until nice and golden. At last minute, baste with sauce.
- Serve kabobs with fresh herbs, additional sauce, and fresh lime juice.
- Enjoy with your favorite Citarella sides!
