Salmon Sliders with Radicchio Slaw

This recipe takes sliders to the next level with our buttery salmon and a combination of delicious flavors like garlicky aioli, bright scallion, and zesty red wine vinegar to complement it. Enjoy them year-round!
Ingredients
- 1 lb centre cut salmon
- 2 Tbsp Citarella Fish Rub
- 5 Tbsp Citarella olive oil, divided
- 1 pack Citarella Parker House rolls
- 1 head radicchio, sliced thinly
- 1 head yellow endive, sliced thinly
- 2 Tbsp scallions, thinly sliced
- 2 Tbsp parsley, minced
- 2 Tbsp Citarella red wine vinegar
- ¼ cup Aioli
Instructions
- Cut salmon into 6 even pieces. Season each piece with salt, pepper, and Citarella fish rub.
- In a large non-stick skillet over medium-high heat, add 2 tablespoons olive oil. Once shimmering, add salmon and cook for 2 minutes per side until just barely cooked through. Set aside.
- Cut Parker House rolls in half and toast in pan you cooked the salmon.
- In a bowl, mix together radicchio, endive, scallions, and parsley. Season with red wine vinegar, remaining olive oil, salt, and pepper.
- Assemble sliders by adding aioli to buns, top with salmon, and finish with radicchio slaw.
- Serve with your favorite Citarella sides and enjoy!
